How to Cook With Pine Nut Oil

Pine nut oil is a popular cooking and medicinal oil used in Mediterranean, Russian and Chinese cultures. Pine nuts contain 60 percent oil and are cold pressed to produce a nutty-flavored, golden yellow oil that is rich in antioxidants. To preserve the high levels of antioxidant activity, use this oil in uncooked recipes. Pine nut oil is best used in salad dressings and drizzled in simple pasta dishes.

    Create a delicious Caesar salad dressing with pine nut oil. With fresh, everyday ingredients, pine nut oil can transport an ordinary salad green into a Mediterranean delight.
    Smash together in a large wooden salad bowl the garlic and anchovy fillets with a fork to make a paste. Add Worcestershire sauce, Dijon mustard and lemon juice and blend thoroughly. Add in the pine nut oil and whisk with the fork. Right before adding romaine, toss in the Parmesan to the salad dressing. Serve this dressing over romaine.
